Adjusting stock and writing off waste

A delivery that arrived, a tray that fell — every quantity change is a movement with a reason.

1 min read

Every quantity change is a movement — never a silent overwrite. That’s what makes the numbers trustworthy: months later you can still see why the tomatoes went down on a Tuesday.

The scenario

A crate of 20 kg tomatoes arrives without a purchase order. Later a tray of 12 burger buns hits the floor.

Book the delivery

  1. 1Open the tomatoes on Inventory › Stock and press Adjust stock. The dialog Adjust “Tomatoes” shows On hand.
  2. 2Under Movement choose Receive (stock in), Amount 20, and in Note (optional) write the delivery note number — delivery #1042. Press Apply — Stock updated.

Write off the buns

  1. 1Open the Waste tab and press Record waste. Item buns, Quantity 12, and a Reason — waste always takes one. Press Write off — Waste recorded.
  2. 2The tab totals a Waste value for the period, so “how much are we throwing away?” has a number.

The other movements

  • Transfer out — stock leaving for another branch.
  • Set counted total — “there are 15, whatever you think” — the one-item version of a count.
  • Adjust (signed) — a plain plus or minus when nothing else fits. Use it last.
TipIf a supplier delivers regularly, raise a purchase order instead of receiving by hand — it records the cost too, and cost is what turns stock into food-cost percentages.
